Scarcely
a century ago, vegetables were
our staple diet. The Vilmorin
seed catalogue included at the
time a surprising number of
varieties of cabbages, lettuces,
turnips, beans… offering an
incredible diversity compared
with what we have nowadays.
Nutritionists are unanimous: we
must eat more fruit and
vegetables, for vitamins, fibre,
antioxidants etc. Vegetables are
excellent for our health.
For years, here at Valloires, we
have been showing visitors how
to enjoy the colours and the
scents of plants; we decided
recently to illustrate their
flavour by creating an original
restaurant menu. |

Soup :
With a different soup each day,
hot or chilled, based on fresh
seasonal vegetables or flowers,
the Valloires soup also goes
down well with children. It
makes us go back in time to when
soup was the staple diet in
France. |

Pancakes
Vegetables in spring and
mushrooms in autumn, kitchen
garden cookery in tune with the
seasons.

Fruit pies :
Caramelised apples or pears with
traditionally-made ice cream
from the region.

Surprises :
rose sorbet, violet “kir”
aperitif, walnut wine, iced tea
made from garden herbs…
generous Nature in all her forms
can be seen from the beginning
to the end of the meal at
Valloires.
